Last day before going on Easter holiday,  our school organised different activities to share a day together in harmony. One of the most popular events is related to gastronomy. Every year each class cooks different plates according to the topic of the year. This time the topic was related to Cervantes, one of the most outstanding writers in Spain and Shakespeare, one of the most brilliant writers in Britain,  to conmemorate the date of their deaths, 400 years ago.

OIL



Oil is the result of the milling process that transforms  olives , the fruit of the olive tree, into oil. Later this name was extended to all fats that are in the liquid state, at room temperature and even to other substances .

The olive tree is a long-lived plant that can easily reach hundreds of years : this characteristic is due primarily to the fact that it is able to regenerate all or much of the epigeous apparatus and underground that are damaged . The olive tree is also an evergreen plant , with only a slight decrease in winter.
Epidemiological studies have shown a lower incidence of cardiovascular disease and cancer in the Mediterranean basin . The beneficial effect of olive oil is attributable to the particular chemical composition , with a predominant concentration of monounsaturated fatty acids and a perfect balance of polyunsaturated , in addition to the discrete content of vitamin E in the presence of minor compounds such as polyphenols and phytosterols.

The Mediterranean diet is the result of millennia of exchange of people, cultures and foodstuffs all over the Mediterranean basin. It is characterized by the presence of vegetables and fruits, bread, fish, olive oil, poultry,  while the consumption of red meat is relatively low. A moderate consumption of wine during a meal is also allowed. The food pyramid clearly describes it. These days a standard Western diet has become far more popular in Italy, against Mediterranean diet, which remains a model of health sustainability: it is therefore necessary to enhance suitable resource management and to support quality in food. Practical and large scale projects should be started, in order to give advice about meals both for families and for the different kinds of community, respectively.
